Pasta with grilled vegetables

Soak tomato pieces in hot wat3es for 5 minutes, peel and cut then keep the water drained from cutting and keep on the side.

Cut all vegetables (zucchinis, eggplant, colored capsicums and carrot) into equal sized slices (slice can be halved if desired), place vegetabels in a deep bowl and pour over 3 TBs olive oil and ¼ tsp minced garlic, mixed vegetables and leave for 5 minutes.

Cut mushrooms and add 1 TBs olive oil, roast mushrooms in a grill or wok the remove mushrooms and keep on the side, roast vegetables and stir the sprinkle with ¼ tsp crushed black pepper, leave until red roasted from the other side then remove from wok and keep on the side.

In a pot add onions and 3 ½ TBs olive oil the leave to roast on low heat, add 1 tsp garlic, salt and ½ tsp crushed black pepper, stir ingredients the add chopped tomatoes with the water, cover pot and leave to simmer on low heat until tomatoes are soft.

Add spices, herbs and tomato paste, leave a little, add hot water and cover pot, cook until water reduces and oil floats on the surface, add pasta and mix with tomato sauce and stir for 2 minutes, add vegetables and mushrooms and mix.

Place ½ the pasta amount in a serving dish then ½ the parmesan cheese then remaining pasta and finally the remaining parmesan, if desired garnish the dish with olive slices and basil leaves.
