Oven Baked Salmon with Potatoes and Olives

Carefully remove salmon’s skin, cut each salmon filet into 2 pieces from the middle to get 6 square salmom pieces, sprinkle with onion and lemon juice then salt and marinade spices on both sides, press on the pieces a little so the spices adhere to the salmons surface, add oil on the pieces the leave in the fridge for 2 hours.

Cut potatoes into cubes or medium sized pieces, sprinkle with ¼ tsp turmeric then fry in deep oil and leave on the side.

Add onions to olive and canola oil, leave until red crisp then add green onions and parsley and stir a little then add garlic, salt, 1/3 tsp turmeric, spices, cream and fried potatoes, leave cream to boil for 1 minute and switch of heat.

Fry fish on both sides with a little oil until light crisp, place fish in a oven pan, take out potatoes from cream mixture and line up next to fish pieces (remove seeds first and cut each piece form the middle into 2 halves).

Place pan in the oven at moderate heat for 25 minutes, if the surface is not roasted open the upper flame for 2 minutes or until the fish’s surface turns red crisp.
